The lemon sole is a flatfish with a smallish head and mouth. It has a slimy skin which is reddish brown in colour. It has other colours behind the pectoral fin such as pink and orange, and has flecks of yellow and green. Adult lemon sole can reach up to 65cms; however, typically, they reach between 20-30cm. The lemon sole is an expensive pure white, meaty fish with a particularly delicate flavour and texture. It does not taste of lemon in any way. |
